RECIPE: Pasta Carbonara
The brilliance of this dish is the simplicity. A simple working class italian dish that is light, delicate, and savory. Equally easy to prepare. INGREDIENTS:
1/2 box of Spaghetti
Olive oil
Parmigiano-Reggiano
Hunk of Panchetta (High class italian bacon - regular bacon works as well)
Salt/Pepper

RECIPE: Pasta w/ Spicy Tilapia Sauce
Tried out this pasta dish tonight with a hearty tilapia fish sauce. Great spicy kick! It’s a nice alternative to the standard spicy italian sausage marinara. Serve with crusty bread and a medium weight red wine to balance the spiciness.
INGREDIENTS:
Tilapia Fillets (2-3 depending on size)
1 box pasta (I used Fettucini)
2 jalapenos
3-4 medium shallots
3 cloves garlic
